What “natural wine” actually means (and when to skip it)

“Natural wine” gets thrown around a lot, and half the time nobody at the table can say what it actually is. The short version: it’s wine made with minimal intervention — organic-ish farming, wild yeasts, little or no added sulphites, nothing stripped out and nothing dressed up.

Sometimes that makes something alive and delicious. Sometimes it tastes like kombucha that lost a fight. At a tasting we’ll pour both kinds side by side so you can decide where you land — no side-eye either way.
