The only wine-and-cheese rules you actually need

Wine and cheese is one of life’s great pairings, and honestly it’s hard to get very wrong. But a few simple rules will make almost any board sing.

Match intensity. Delicate cheeses want delicate wines, while a big aged cheddar can stand up to a bold red. Nobody should be shouting over anybody.

What grows together goes together. A creamy Alpine cheese loves a crisp Alpine white — regional pairings are classics for a reason.

When in doubt, reach for bubbles. Sparkling wine cuts through rich, salty, creamy cheeses like nothing else, and it’s the most forgiving pour on any board.

And don’t forget the sweet-and-salty trick: a little honey or a sweeter wine against a salty blue is pure magic.

That’s really it. Build a board you’re excited about, pour something you enjoy, and let everyone graze. The best pairing is always the one shared with good company.
